Infobox

No, it should use the infobox that's designed for what the person's notability claim is. The spouse of the prime minister isn't a political office, granted, but it is still a public role that makes the person notable. The First Lady of the United States isn't a political office either, but Michelle Obama and Melania Trump and Jill Biden still have a politically-oriented infobox that lists a title and contextualizes them with dates of service and predecessors and successors — and so do the Second Ladies (and Gentleman) — and there's no legitimate reason why the spouses of the prime ministers should be treated any differently.
For an example of why "infobox person" doesn't work, keep in mind that "infobox person" offers no way for her infobox to contextualize her significance: it offers no way to list the dates of her service in the role that made her a topic of public interest, it offers no way to list the people who came before and after her in that role, and on and so forth. So we have to use an infobox that offers the ability to incorporate and display that information, not one that renders it all invisible.
Please note, as well, that you can be blocked from editing Wikipedia if you persist in imposing edits that aren't supported by consensus. If you believe strongly about this, you're more than welcome to initiate a discussion to propose that we switch from "infobox political spouse" to "infobox person" — but you are not entitled to just go around changing all the infoboxes yourself without securing an agreement from other Wikipedia editors that the change is warranted, or to go around editwarring anybody who reverts you.
