http://www.chemspider.com/Chemical-Structure.75546.html suggests covalent U-I bonds. That makes I3U the correct formula.
https://iupac.org/wp-content/uploads/2018/05/Inorganic-Brief-Guide-V1-3.pdf then dictates that the correct name is uranium tris(iodide) or (better?) triiodouranium.
Uranium triiodide suggests it is a salt leading to a formula like U3+·3I3- or UI9.
https://echa.europa.eu/substance-information/-/substanceinfo/100.033.992 shows a salt with formula [U3+]·3[I-] or UI3 thus IUPAC recommends the name uranium tris(iodide).
